If you have ever had the experience of grating a fresh piece of horseradish you will know its energetics. The horseradish combines perfectly with the sweetness of the beetroot.
Preparation time: 40 mins
1 teaspoon fresh parsley
4 tablespoons horseradish
1/4 cup cider vinegar
1 teaspoon mild honey
Boil the beetroot and chop or grate very finely. Chop the onion and parsley finely and grate the horseradish or use ready-prepared horseradish from a jar (in which case use a little less cider vinegar). Combine all the ingredients and let them sit for a while, the longer the better, before serving. The relish will keep for a few weeks in a sealed container in the fridge. This recipe will make 2-3 cups.
