If you have ever had the experience of grating a fresh piece of horseradish you will know its energetics. The horseradish fills the sinus with searing heat, makes the eyes water and wakes up every inch of the lungs’ membranes. So, as you might expect, this is a lively relish. The horseradish combines perfectly with the sweetness of the beetroot.

Ingredients
4 beetroot
1 onion
1 teaspoon fresh parsley
4 tablespoons horseradish
1/4 cup cider vinegar
1 teaspoon mild honey

Method
Boil the beetroot and chop or grate very finely. Chop the onion and parsley finely and grate the horseradish or use ready-prepared horseradish from a jar (in which case use a little less cider vinegar). Combine all the ingredients and let them sit for a while, the longer the better, before serving. The relish will keep for a few weeks in a sealed container in the fridge. This recipe will make 2-3 cups.
